Description

Saltimbocca alla Romana is a very particular dish. Saltimbocca literally translates to jump in the mouth. It has been a staple in my immediate family for as long as I can remember. That said, the presentation of the dish that I knew was drastically different than that of the restaurants in Italy that I visited. Every restaurant prepared their Saltimbocca alla Romana a little differently. I went on a quest to find out the history of the dish. From ancient Rome to Pellegrino Artusi's creation of a Italian Cuisine, Saltimbocca alla Romana, or at least a dish that closely resembles it has existed. It has changed in presentation and ingredients, but this dish has been jumping into people's mouths for centuries.
